I have fed raw since before and after EPI. The 85/15 is completely fine. Any meat/bone that's ground up should be fine (assuming pancreatitis was never an issue).

Some skin is OK too.

I can't offer much here beyond what was already said here. Really, the only time that Chance experienced lethargy was when his B12 levels were crazy low. But that improved quickly after the first injection. Rylee doesn't do lethargy! She's still a complete lunatic, and still hasn't grown a brain 🤣. ...

I feed raw. When first starting out, I was feeding meat from one supplier that had a pretty high fat content. (Enzymes was and still is Creon capsules). Without the TLI, it's going to be difficult to know if Posto has EPI; BUT it sounds like it's a possibility.
